Makes 12 large muffins

Ingredients:

  • 1 cup flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp freshly grated nutmeg
  •  4 oz butter
  • 1/2 cup sugar
  • 1/2 cup light brown sugar, packed
  • 1 cup (2 medium) mashed ripe bananas
  • 2 eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1/2 cup coarsely chopped walnuts
  • 1 1/2 tblsp grated orange peel

Method:

  1. Pre-heat oven to 350F. Line muffin pan with bio-degradable paper cups.
  2. Sift together  flours, baking soda, salt  and spices. Set aside.
  3. In a saucepan, melt butter over medium heat. DO NOT allow to brown. Blend in the sugars and remove from heat. Stir in the bananas first and then the eggs and vanilla. Stir till well combined. Then stir in the flour and fold in the nuts and orange peel.
  4. Spoon the batter into the prepared tray. Each cup will be very full. Bake until golden brown and a cake tester comes out clean, about 25 mins.
